Shredded Hashed Brown Potatoes
|Potatoes||1 Pound (3 Medium)|
|Chopped onion/Green onions||1⁄4 Cup (4 tbs)|
|Cooking oil||1 Tablespoon|
Peel and shred the potatoes.
Rinse the potatoes and drain well.
Pat the potatoes as dry as possible with paper towels.
In a large mixing bowl stir together the potatoes and onion or green onions.
Add the cooking oil, pepper and paprika; toss till potatoes are well coated.
Spread potatoes in a 15x10 x1-inch baking pan.
Bake in a 450° oven for 25 to 30 minutes or till the potatoes are crispy and golden, stirring once or twice.
