Grilled Hash Brown Potatoes
|All purpose potatoes||15 Ounce, pared, shredded|
|Shredded onion||1⁄2 Cup (8 tbs)|
|Reduced calorie cheddar cheese/Swiss cheese, shredded||1 1⁄2 Ounce|
|1% low fat milk||1⁄4 Cup (4 tbs)|
|Reduced calorie margarine||4 Teaspoon (1 Tablespoon Plus 1 Teaspoon, From Tub)|
1. Place grill rack 5 inches from coals. Prepare grill according to manufacturer's directions. Tear off two 18-inch pieces of aluminum foil.
2. In medium bowl, combine potatoes, onion, cheese, and salt. Spoon potato mixture onto 1 piece of foil; shape into 12-inch log. Pour milk over potatoes; dot with margarine.
3. Wrap foil around mixture, making sure seams are tightly sealed. Wrap foil package in second length of foil; place on grill and cook 1 hour, turning every 5 minutes to ensure even cooking and prevent
burning. Carefully unwrap foil layers; cut into slices.
