Cheddar Cheese Sage Bites

  Grated sharp cheddar cheese 8 Ounce (2 Cups)
  All purpose flour 1 Cup (16 tbs)
  Salt 1⁄2 Teaspoon
  Cayenne 1⁄8 Teaspoon (Adjust Quantity As Per Taste)
  Unsalted butter 1⁄2 Cup (8 tbs), cut into bits (1 Stick)
  Minced sage leaves/2 teaspoons dried sage, crumbled 2 Tablespoon (Fresh)

In a food processor combine the Cheddar, the flour, the salt, and the cayenne, and process the mixture until it is combined.
Add the butter and the sage and process the mixture until it just forms a ball.
Wrap the dough in plastic and chill it for 1 hour.
Form 1-inch balls of the dough, pressing them slightly to flatten to about 1/4-inch thick, 1 inch apart on parchment-lined baking sheets, and bake them in a preheated 375° F. oven for 10 to 12 minutes.
Cool the biscuits on a wire rack.
