Just Plain Good Hamburgers
|Lean beef||1 Pound, ground|
|Ground beef||1 Pound (lean)|
|Yellow onion||1 Small, grated (peeled)|
|Black pepper||1⁄4 Teaspoon|
1. In a large bowl, combine the beef, onion, salt, and pepper. Shape the mixture into 4 patties, each about 1 inch thick.
2. Topanbroil: Heat a lightly oiled heavy 12-inch skillet over moderate heat until hot. Cook the patties, uncovered, 3 minutes on each side for rare, 4 for medium, 6 for well done. Do not press on the patties or you will force out the juices.
To broil: Place the patties 3 inches from the heat, and cook 2 minutes on each side for rare, 3 to 4 for medium, 5 to 6 for well done. Serve sandwich style on toasted hamburger buns.
