Hamburgers Stuffed With Mozzarella And Red Peppers

Ingredients
  Chopped roasted red peppers 1⁄4 Cup (4 tbs), patted dry
  Diced part skim mozzarella cheese 1⁄4 Cup (4 tbs)
  Black olives 4 , pitted and coarsely chopped
  Minced fresh basil/1 teaspoon dried basil, crumbled 1 Tablespoon
  Balsamic wine vinegar/Red wine vinegar 1 Teaspoon
  Lean ground beef 1 Pound
  Garlic 2 Clove (10 gm), minced
  Salt 1⁄4 Teaspoon
  Black pepper 1⁄4 Teaspoon
Directions

1 ln a medium-size bowl, combine the red pepper, cheese, olives, basil, and vinegar.
In another medium-size bowl, combine the beef, garlic, salt, and black pepper.
2 Using your hands, shape the beef mixture into 8 thin patties about 3 1/2 inches in diameter.
Spread the cheese mixture on top of 4 patties, dividing the amount equally.
Place the 4 remaining patties on top and pinch the edges to seal.
3 Preheatthe broiler, setting the rack 6 inches from the heat.
Arrange the stuffed burgers on a broiler pan and broil for 3 to 4 minutes on each side for medium-rare, 4 to 5 minutes for medium, or 5 to 6 minutes for well-done.
