Pasta With Ham
|Sour cream||3⁄4 Cup (12 tbs) (About 1.5 Gill)|
Knead a stiff pasta of the flour and one egg with a little water.
When dry, roll out, cut squares about half an inch wide, boil these in salt water and rinse with cold water.
Cream lard or butter, with yolks of two eggs and mix in minced ham or smoked meat, a pinch of ground pepper and salt.
Add sour cream and the drained pasta.
Finally fold in whites of two eggs beaten stiff.
Grease a casserole with lard, and dust with bread crumbs.
Put in the mixture and bake in a moderate oven till top is nicely browned.
If you use ready made pasta, cook 3/4 lb. of it.
