Fruited Ham Dinner
|Bananas||2 , peeled and quartered|
|Canned peach slices||8 Ounce (1 Can, Undrained)|
|Canned pear halves||7 3⁄4 Ounce (1 Can, Undrained)|
|Maraschino cherries||12 , halved|
|Pumpkin pie spice||1⁄4 Teaspoon|
|Fully cooked ham slice||2 Pound (1 Inch Thick Slices)|
|Canned sweet potatoes||29 Ounce, drained and cut in half (1 Can Of 1 Pound And 13 Ounce)|
|Firmly packed brown sugar||1 Cup (16 tbs)|
|Prepared mustard||2 Tablespoon|
Combine canned fruit.
Drain off all but 1/2 cup syrup.
Mix together 1/2 cup syrup and pumpkin pie spice.
Place ham in a 12x8x2 inch glass baking dish.
Arrange sweet potatoes around ham.
Mix together brown sugar, mustard and reserved 1/2 cup syrup.
Pour over ham and potatoes.
Cover with plastic wrap.
Microwave 6 to 9 minutes, giving dish a 1/2 turn during cooking.
Arrange fruit over top of ham.
Baste with drippings in bottom of dish.
Microwave 8 to 10 minutes, giving dish a 1/2 turn during cooking.
