|Celery hearts||1 1⁄2 Small|
|Parsley||1⁄4 Cup (4 tbs) (About A Handful)|
|Chives||3⁄4 Bunch (75 gm) (1 Small Bunch)|
|Lemon||1⁄2 , juiced|
|Cream cheese||3 Ounce|
|Strong mustard||1 Teaspoon|
|Cayenne pepper||1 Pinch|
|Chopped walnuts||1 Cup (16 tbs)|
1 Cut 2 of the slices of ham into fine strips.
2 Clean the celery and chop it as finely as possible. Peel and finely chop the shallots. Wash, dry and chop the parsley and chives.
3 Mash the cheese and beat in the parsley, chives, shallots, 1 tablespoon lemon juice, the mustard, salt, paprika and cayenne pepper.
4 Stir in the chopped ham, celery and nuts. Beat well until the mixture is very smooth and creamy. Spread this mixture on the four remaining ham slices and roll these up to form logs. Serve chilled, on a bed of lettuce and decorated with sliced tomatoes and a few sprigs of parsley.
