Ingredients
  Bacon 2 1⁄2 Pound (corner or slipper)
  Root vegetable slices 4 (for flavor)
  Bay leaves 2
  Peppercorns 6
  White wine 1 Cup (16 tbs)
  Onion 1 , finely chopped
  Butter 1⁄4 Cup (4 tbs)
  Plain flour 6 Tablespoon
  Veal stock/Chicken stock 1 1⁄4 Cup (20 tbs)
  Salt To Taste
  Pepper To Taste
  Egg yolks 2
  Cream 2⁄3 Cup (10.67 tbs)
  White grapes 1⁄2 Pound, peeled and pits removed
  Chopped parsley 1 Tablespoon
Directions

MAKING
1)Take a saucepan, add bacon, vegetables, bay leaves,peppercorns. Cover with water and simmer,allowing 20 minutes per lb, plus 15 extra minutes.
2)Once done,remove and cool.
3)In a pan, melt butter and add the flour and cook for a few minutes.
4)Now add stock, and let it boil.
5)Now pour the strained white wine
6)Add the seasoning
7)Take a bowl, add yolks and cream and mix well. Pour a little sauce on the mix. mix again.
8)Now add this to the pan,whisking,and reheat without boiling.
9)Toss in the grapes.
10)Drain the ham, strip the skin and slice neatly.

FINALIZING
11)Now arrange on a dish with the saice and sprinkle parsley.

SERVING
12)Serve the sauce on the side with the meat
