Fried Ham Steak and Red Eye Gravy
|Ham steaks||2 (1/4 Inch Thick)|
|Dark brown sugar||3 Teaspoon|
|Strong coffee||1 1⁄2 Cup (24 tbs)|
Remove the rind from the ham steaks and score the fat.
Brush the ham steaks with the brown sugar and let sit for about 10 minutes.
Then place in a heavy skillet over a low heat.
When the bottom is brown (about 6 to 8 minutes) turn over and sprinkle a little more brown sugar on the top side of the ham.
(make sure the sugar doesn't burn).
When the second side is brown, check to see that the steaks are fully cooked.
If not, lower the heat and cook until done.
Remove to a warm platter.
Mix the teaspoon of sugar into the coffee and pour into the pan.
Turn up the heat and scrape the stuck-on pieces off the bottom of the pan.
When the coffee is almost boiling, taste the gravy and if too bitter, add a little more sugar.
Pour over the ham steaks and serve them with eggs, biscuits and plenty of hot coffee.
