Ham And Potato Scallop
|Potatoes||12 Pound, pared and thinly sliced (5 Quarts)|
|Cooked ham||4 Pound, sliced thin|
|Condensed cream of mushroom soup||4 Can (40 oz)|
|Milk||1 Cup (16 tbs)|
|Onions||2 Medium, chopped to make 2 cups|
|Green pepper||1 Large, chopped to make 1 cup|
|Salt||1 1⁄2 Teaspoon|
|Minced parsley||2 Tablespoon|
Place potatoes in two greased 13 x 9 x 2-inch pans.
Cut ham in serving pieces, bury in potatoes.
Combine soup, milk, onion, green pepper, and seasonings; pour over potatoes.
Dot casserole with butter.
Bake at 350° 1 hour.
Then cover pans with foil and bake 1 1/2 hours longer, or till done.
Sprinkle with parsley.
