Smothered Greens

Ingredients
  Assorted greens 5 Pound (Such As Kale, Collard Greens, Or Mustard Greens)
  Smoked ham hocks 3 Pound
  Onion 1 Medium
  Water 2 Quart
  Salt 1 Teaspoon
  Hot pepper sauce 1 Teaspoon
Directions

1. Remove stems and tough ribs from greens; rinse well with cool running water. Cut into 1/2-inch pieces.
2. In 8-quart saucepot, combine ham hocks, onion, water, and salt; heat to boiling over high heat. Add greens to pot in batches, stirring to wilt. Heat to boiling. Reduce heat; cover and simmer until very tender, about 1 hour. Discard ham hocks. Serve with hot pepper sauce.
