Ham And Endive Au Gratin
|Belgian endives||8 , roots trimmed|
|Lemon juice||1⁄3 Cup (5.33 tbs)|
|Flour||1⁄4 Cup (4 tbs)|
|Milk||2 Cup (32 tbs)|
|Grated sharp cheddar cheese||3⁄4 Cup (12 tbs)|
|Baked ham slices||8 (Thin)|
In large skillet, arrange endives in 1/4 cup butter, melted, lemon juice, 2 tablespoons water; sprinkle with 1/4 teaspoon salt.
Cover; simmer 30 minutes.
(Add a little water if needed.) Preheat oven to 450°F.
In saucepan, melt 1/4 cup butter; remove from heat.
Stir in flour, cayenne, milk; bring to boil, stirring; reduce heat; add 1/2 cup of the cheese; simmer over low heat until cheese melts.
Drain endives; wrap each with ham slice, leaving ends uncovered.
Arrange in baking dish; cover with sauce; top with remaining cheese and paprika.
Bake 15 minutes.
