1⁄2 Pound, bias-sliced into 1-inch pieces to make 2 cups
1 Small, sliced into thin wedges
Finely chopped cooked ham
1⁄4 Cup (4 tbs), finely chopped
Cook green beans, covered, in a small amount of boiling salted water for 4 minutes; drain.
Preheat a wok or large skillet over high heat; add cooking oil.
(Add more oil as necessary during cooking.) Stir-fry green beans and onion wedges in hot oil about 3 minutes or till green beans are crisp-tender.
Stir in ham.
Cook and stir for 1 minute.
Sprinkle vegetables with a little salt and pepper, if desired.
