|Dijon mustard||1⁄4 Cup (4 tbs)|
|Firmly packed dark brown sugar||1 Cup (16 tbs)|
|Honey mustard sauce:|
|Wholegrain mustard||1 Cup (16 tbs)|
|Honey||1⁄2 Cup (8 tbs)|
Preheat the oven to 325°F.
With a sharp knife, score fat side of ham diagonally to create a diamond pattern, making cuts about 1/4-inch deep.
Insert whole cloves into the corners of the diamonds, all over top of ham.
Place the ham, decorated side up, on a rack in a roasting pan.
In a small bowl, whisk together the orange juice and Dijon mustard and pour over the ham.
With the palms of your hands, pack the brown sugar over the top of the ham.
Cover with foil and bake for 1 hour.
For the honey-mustard sauce.
In a small bowl, whisk together the whole-grain mustard and honey until well blended.
Cover and let stand at room temperature until serving time.
Remove the foil from the ham and continue baking until golden brown and crusty, basting the ham with the pan juices every 10 minutes for about 30 to 45 minutes.
Cover and let stand for 10 to 15 minutes before slicing.
