Spiced Ham With Orange Glaze

pastryparrot1's picture
I found a 9 pound bone-in ham at the market for $11. Here is the way I make my glaze and bake it. It turns out delicious and can be stretched quite a bit. If you are serving it at a party and you have left overs use them for breakfast with fried eggs or sandwiches for lunch or make a split pea soup using the bone. Yum!
Bone in ham 10 Pound (1 Piece)
  Orange marmalade 14 Ounce
Dark molasses 1⁄4 Cup (4 tbs)
  Ground clove 1⁄2 Teaspoon
  Nutmeg 1⁄2 Teaspoon
  Cinnamon 1⁄2 Teaspoon
  Dijon mustard 1 Tablespoon

Preheat oven to 375 degrees.
Score the ham by using a sharp knife and inserting it about 1/3rd inch into the fat.
Make some diamond shapes. This will make the skin crispy.
Place marmalade in a heavy pan and melt. Add the molasses and spices. Mix well.
Add the mustard and mix again. Bring to a soft simmer.
Place the ham on a rack in a roasting pan. Coat the ham with glaze and place in the oven for 30 minutes.
Remove and reglaze. Cook for another 30 minutes. Reglaze and cover loosely with aluminum foil.
Bake for an extra hour. Remove from oven and let it sit for a few minutes. Carve and serve.
