Broccoli And Ham Squares
|Cooked broccoli||1⁄2 Cup (8 tbs), mashed drained (Freshly Made)|
|Lean ham||1⁄2 Cup (8 tbs), ground, boiled|
|Onion juice||1⁄2 Teaspoon (Freshly Made)|
|Lemon juice||2 Teaspoon|
|Creamed butter||1 Tablespoon|
Combine first 5 ingredients.
Carefully break rye wafers in half crosswise.
Spread each square with butter then with 2 teaspoons of the broccoli mixture.
Garnish with pattern of white and yellow of egg made by cutting the egg white into narrow strips and forcing the yolk through a fine sieve.
Place a strip of egg white from each corner of wafer, pointing toward the center.
In the center place a small heap of fluffy pureed egg yolk.
