Roast Fresh Ham

Ingredients
  Fresh ham 1
  Garlic 1 Clove (5 gm), cut
  Caraway seeds 1 Tablespoon
  Onions 4 , sliced
  Carrots 2 , sliced
  Celery stalks 2 Medium, sliced
  Bay leaf 1
  Whole cloves 3
  Water 1 Cup (16 tbs)
  Dry white wine 1 Cup (16 tbs)
Directions

Score skin of ham in two directions, making a diamond pattern.
Rub meat on all sides with garlic, salt, pepper, and caraway seeds.
Put onions, carrots, celery, bay leaf, and cloves on bottom of large baking pan.
Add water.
Put ham, skin side down, on vegetables.
Roast, uncovered, in preheated slow oven (325 F.) for 1 hour.
Baste frequently with pan juices and wine.
Turn meat skin side up and roast until done (170°F.on a meat thermometer).
Roasting time is 25 minutes per pound, from the time meat is put in the oven.
Baste often with pan juices and wine.
