Stir Fry Ham & Peaches

  Peas 1 Cup (16 tbs) (Fresh / Frozen)
  Canned sliced cling peaches 29 Ounce (1 Can)
  Water 3⁄4 Cup (12 tbs)
  Dry sherry 3 Tablespoon
  Soy sauce 3 Tablespoon
  Honey 2 Tablespoon
  Cornstarch 2 Tablespoon
  Ground ginger 1⁄4 Teaspoon
  Vegetable oil 2 Tablespoon
  Garlic 1 Clove (5 gm), sliced
  Fully cooked ham 1 Pound, thinly sliced
  Minced green onion 1⁄2 Cup (8 tbs)
  Canned water chestnuts 8 1⁄2 Ounce (1 Can)
  Rice 3 Cup (48 tbs), cooked (Brand)

Thaw peas, if frozen.
Drain sliced peaches; reserve 1/2 cup syrup.
Combine reserved syrup, water, sherry, soy sauce, honey, cornstarch and ginger.
Mix well.
In a large skillet, heat oil and garlic over high heat until garlic is brown; remove and discard.
Add ham, a few pieces at a time, making sure skillet remains very hot.
Cook and stir 1 to 2 minutes.
Add peas and green onion.
Cook and stir 1 minute.
Stir cornstarch mixture and add to ham and vegetables.
Cook, stirring constantly, until thickened.
Add sliced peaches and water chestnuts.
Stir to coat with sauce.
Heat thoroughly.
Serve immediately over hot cooked rice.
