Green Beans And Salsify With Country Ham And Pecans

  Green beans 2 Pound, trimmed
  Lemon 1⁄2
  Salsify 1 Pound
  Vegetable oil 3 Tablespoon
  Pecan halves 3⁄4 Cup (12 tbs)
  Country ham 4 Ounce, cut into 2-by-1/4-inch strips
  Pure maple syrup 1⁄2 Tablespoon
  Salt To Taste
  Freshly ground pepper To Taste

1. In a large pot of boiling, salted water, cook the beans until tender, 7 minutes. Transfer to a baking sheet. Keep the water boiling.
2. Squeeze the lemon into a bowl of water. Peel the salsify, slice on the diagonal 1/2 inch thick and transfer to the lemon water. Drain and add to the boiling water. Cook until just tender, 4 minutes, then drain and pat dry.
3. In a large, deep skillet, heat the oil. Add the pecans and salsify and cook over high heat until browned on the bottom, about 4 minutes. Add the ham; reduce the heat to moderate and cook, stirring, until heated through, 1 minute. Add the beans and cook, stirring, until hot, 3 minutes. Stir in the maple syrup, season with salt and pepper and serve at once.
