Ham With Mustard And Madeira Or Sherry

Ingredients
  Butter 2 Tablespoon
  Boiled ham slices 4 , trimmed
  Tomato paste 1 Tablespoon
  Mild french mustard 1 Tablespoon
  Flour 1 Tablespoon
  Beef broth 1⁄2 Cup (8 tbs)
  Madeira/Sherry 1⁄4 Cup (4 tbs)
  Scallions 3 Tablespoon, chopped
  Sour cream 1⁄2 Cup (8 tbs)
Directions

MAKING
1 In a pan, heat the butter.
2 Put the ham steaks in the pan and sauté until lightly colored.
3 Remove the ham from the pan and transfer to a dish.
4 In the same pan, add tomato paste and mustard.
5 Gradually stir in the flour.
6 Pour in the beef broth and Madeira slowly, stirring constantly.
7 Return the ham to the pan and simmer for 20 minutes.

SERVING
8 Serve hot, garnished with chopped raw scallions and sour cream.
