Halibut Jardiniere

Ingredients
  Halibut fillets 12 Ounce
  Dry white wine 1⁄4 Cup (4 tbs)
  Water 1⁄2 Cup (8 tbs)
  Lemon juice 1 Tablespoon
  Onion 1⁄2 Small, julienned
  Carrot 1⁄2 Small, julienned
  Celery stalks 1 Small, julienned
  White pepper To Taste (optional)
Directions

Combine the wine, water, and lemon juice in a skillet.
Bring to a light boil.
Place the halibut in the hot liquid.
Sprinkle julienned vegetables over the top of each fillet; cover and simmer gently for approximately 10 minutes.
Remove the fillets to a hot serving platter, leaving the vegetables in the skillet.
Reduce the sauce by one-half and spoon the vegetables and sauce over the fillets.
Sprinkle with a little white pepper if desired.
Serve at once.
