|Halibut fillets||12 Ounce|
|Dry white wine||1⁄4 Cup (4 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Lemon juice||1 Tablespoon|
|Onion||1⁄2 Small, julienned|
|Carrot||1⁄2 Small, julienned|
|Celery stalks||1 Small, julienned|
|White pepper||To Taste (optional)|
Combine the wine, water, and lemon juice in a skillet.
Bring to a light boil.
Place the halibut in the hot liquid.
Sprinkle julienned vegetables over the top of each fillet; cover and simmer gently for approximately 10 minutes.
Remove the fillets to a hot serving platter, leaving the vegetables in the skillet.
Reduce the sauce by one-half and spoon the vegetables and sauce over the fillets.
Sprinkle with a little white pepper if desired.
Serve at once.
