Poached Halibut With Spinach

Ingredients
  Frozen chopped spinach 10 Ounce (1 Package)
  Ground nutmeg 1⁄4 Teaspoon
  Water 4 Cup (64 tbs)
  Lemon juice 1⁄3 Cup (5.33 tbs)
  Onion 1 Small, sliced
  Chopped celery 1⁄4 Cup (4 tbs)
  Salt 1⁄4 Teaspoon
  Halibut steaks 4
  Grated parmesan cheese 1⁄4 Cup (4 tbs)
  Lemon wedges 4
Directions

Cook spinach according to package directions.
Drain well.
Stir in nutmeg.
In a 10-inch skillet combine water, lemon juice, onion, celery, salt, and 1/8 teaspoon pepper.
Simmer 5 minutes.
Add fish; simmer, covered, 5 to 10 minutes or till fish flakes easily when tested with a fork.
Carefully remove fish to a 12 x 7 1/2 x 2-inch baking dish or a broiler-proof platter.
Spread spinach over each halibut steak.
Sprinkle cheese atop each.
Broil fish portions 4 to 5 inches from heat for 1 to 2 minutes.
Garnish with lemon wedges.
