Poached Halibut

This Poached Halibut tastes incredible ! One of the tastiest seafood poaches that I've ever eaten, this seasoned fish is an item that I long for as a pasta or rice accompaniment. Just try out this Poached Halibut and tell me if you like it !
Ingredients
  White wine 1⁄4 Cup (4 tbs)
  Fish stock/Water 1 1⁄2 Cup (24 tbs)
  Bay leaf 1⁄2
  Stalk celery 1 , chopped
  Onion 1 Medium, chopped
  Peppercorns 4
  Halibut 6 Ounce
  Spinach 3 Ounce, chopped
  Garlic 1⁄16 Teaspoon
  Butter 1 Tablespoon
  Almonds 1 Teaspoon, finely chopped
Directions

Combine first six ingredients in saucepan and simmer to reduce liquid and blend flavors.
Poach halibut in liquid 8-10 minutes or until fish flakes easily.
Meanwhile, saute spinach with garlic and butter.
Keep warm until ready
