Savory Baked Haddock

Ingredients
  Haddock fillets/Other fish fillets 2 Pound (Fresh Or Frozen)
  Lemon juice 2 Teaspoon
  Pepper 1 Dash
  Bacon slices 6 , chopped
  Soft bread crumbs 1⁄2 Cup (8 tbs)
  Chopped parsley 2 Tablespoon
  Thinly sliced onion 3⁄4 Cup (12 tbs)
  Bacon fat 2 Tablespoon
Directions

Thaw frozen fillets.
Skin fillets; place in single layer in greased baking dish, 12 x 8 x 2 inches.
Sprinkle with lemon juice and pepper.
Fry bacon until crisp; remove from fat.
Add to bread crumbs and parsley.
Cook onion in bacon fat until tender; spread over fish.
Sprinkle crumb mixture over onion.
Bake in 350°F oven 25 to 30 minutes, until fish flakes easily.
