|Canned stewed tomatoes||14 1⁄2 Ounce|
|Celery stalks||2 Medium|
|Green pepper||1⁄2 Medium|
|Garlic||1 Clove (5 gm)|
|Whole thyme||3⁄4 Teaspoon|
|Hot sauce||1⁄4 Teaspoon|
|Haddock fillets||1 1⁄2 Pound|
Combine first 10 ingredients in a medium saucepan, stirring well.
Bring to a boil.
Cover; reduce heat, and simmer 25 minutes, stirring occasionally.
Rinse fillets with cold water, and pat dry.
Arrange fillets in a 12- x 8- x 2-inch baking dish coated with cooking spray.
Bake, uncovered, at 400Â° for 15 minutes or until fillets flake easily when rested with a fork.
Remove bay leaf from sauce mixture, and discard.
