|Haddock||7 Pound, dressed|
|Vinegar||1⁄2 Cup (8 tbs)|
|Melted butter||1⁄2 Cup (8 tbs)|
|Parsley||1⁄4 Cup (4 tbs), minced|
Wrap haddock completely in cheesecloth; secure cheesecloth well.
Place haddock in shallow pan; add boiling salted water just to cover haddock.
Add vin- egar; bring to a boil.
Reduce heat; simmer, covered, for 30 minutes.
Remove haddock from liquid; place on heated platter.
Remove cheesecloth carefully; keep haddock warm.
Combine butter, parsley and pepper; pour over haddock.
