Baked Haddock And Orange
|Haddock fillet||1 1⁄2 Pound|
|Lemon juice||2 Tablespoon (Juice Of 1 Lemon)|
|Cornflour||2 Teaspoon (Leveled)|
|Sugar||1⁄2 Teaspoon (Leveled)|
Grate the rind from the orange, remove pith and cut pulp acrossinto slices.
Cut the fish into con-venient portions for serving and arrange in a greased dish.
Sprinkle with a little salt, add the lemon juice and arrange the slices of orange over the top.
Cover with greased paper and cook in a fairly hot oven (400° F., Gas 6) for 15-20 min.
Strain off the liquor and make up to J pt with water.
Blend the cornflour with this, add the grated orange rind and sugar and bring to the boil, stirring con-stantly.
Boil gently for 3 min., correct the seasoning and serve with the fish.
