Baja Baked Haddock
|Tomatoes||2 Medium, chopped|
|Hot red pepper||1 Small, seeded|
|Tamari/Soy sauce||2 Teaspoon|
|Ground cumin||1 Dash|
|Garlic||2 Clove (10 gm)|
|Haddock fillets||3⁄4 Pound|
|Corn tortillas||2 , steamed|
|Parsley sprigs||1 (For Garnish)|
|Cherry tomatoes||1 (For Garnish)|
Place the tomatoes, pepper, tamari, oregano, and cumin in a blender.
Push the garlic through a garlic press into the blender.
Process on medium speed until smooth.
Place the haddock in an 8 X 8-inch baking dish coated with no-stick spray and top with the sauce.
Bake at 375° for 20 minutes or just until the fish flakes when tested with a fork.
