Stuffed Fillets Of Haddock

Ingredients
  Haddock fillets 2 Pound (2 Pieces Of 1 Pound Each)
  Chopped thyme 1⁄2 Teaspoon
  Melted butter 1 Tablespoon
  White breadcrumbs 1 Cup (16 tbs)
  Salt To Taste
  Pepper To Taste
  Garlic 2 Clove (10 gm), crushed
  Cream 1⁄2 Cup (8 tbs)
  Chopped parsley 1 Tablespoon
  Mashed potatoes 2 Cup (32 tbs)
  Egg 1
Directions

Lay a fillet of haddock in a buttered casserole.
Make a savory stuffing from the breadcrumbs, garlic, parsley, thyme, melted butter, and seasonings.
Put this on top of the fish and cover with the second fillet.
Moisten with the cream.
Cover and bake in a moderate oven (350°) for 15 minutes.
Now take out of the oven and cover with the mashed potatoes, to which the yolk and the stiffly beaten white of the egg have been added.
Return to the oven and brown.
