A lovely textured guacamole making demonstration with Gavin and Cailin Stone from Authentic Human.
3 Medium, peeled and diced (ripe yet firm)
1 Large, chopped finely
1 Bunch (100 gm), chopped finely
2 Clove (10 gm), minced
2 Small, chopped finely
1 Teaspoon (From Trader Joes)
1.Cut the avocado all the way round along the pit. Give it a twist and open it up. Discard the pit. Scoop out the flesh.
2.Mince the garlic.
3.Chop the shallots and the cilantro leaves finely.
4.Chop the tomato finely.
5.Lightly mash the avocado with a fork into a chunky mixture.
6.Squeeze in the juice from half a lemon on the avocado and mix it in.
7.Add the chopped shallots and the garlic.
8.Drop in the chopped cilantro.
9.Add the chopped tomatoes. Drain a little of the liquid from the tomatoes before putting it in the avocado mixture.
10.Fold it in helping to mix everything together.
11.Add a couple of pinches of salt and the Everyday Seasoning and fold them in the mixture.
12.Serve with any other entrée as a condiment or with chips as a dip.
