When it comes to eating out, Mexican is my all time favorite food to go out for. If I had to pick a last meal it would be Margaritas with chips, salsa, and guacamole washed down with some chicken tacos! Yum...just thinking about it makes me happy! I love making Guacamole when friends come over because it's a fun food! Everyone loves it and it's always the first thing to go so I make it all the time.
  Garlic 1 Tablespoon, minced
  Scallions 4 , minced
  Jalapeno 1⁄2 , minced
  Cilantro 1 Cup (16 tbs), chopped up
  Lime juice 1⁄2 Tablespoon
  Avocados 2
  Salt To Taste

1. Combine garlic, scallions, and jalapeno in a medium bowl.
2. Add in avacado and lime and mash with a fork until you have a nice chunky consistency.
3. Stir in cilantro and season with salt to taste!
