|Regular grits||2⁄3 Cup (10.67 tbs)|
|Chopped green onion||3⁄4 Cup (12 tbs)|
|Chopped sweet red pepper||1⁄4 Cup (4 tbs)|
|Water||3 Cup (48 tbs)|
Coat a medium skillet with cooking spray, place over medium heat until hot.
Add onion and red pepper; saute 3 minutes or until tender.
Add tomatoes and pepper.
Bring to a boil; reduce heat, and simmer, uncovered, 20 minutes, stirring occasionally.
Combine water and salt in a medium saucepan, bring to a boil.
Add grits; cook 10 to 15 minutes, stirring frequently, until thickened.
Remove from heat, stir in tomato mixture, and serve immediately.
