Fried Grits

Ingredients
  Water 4 Cup (64 tbs)
  Salt 1⁄2 Teaspoon
  Uncooked quick-cooking grits 1 Cup (16 tbs)
  Cooked crumbled bacon 2 Tablespoon
  Butter/Margarine 5 Tablespoon (1/4 Cup Plus 1 Tablespoon)
Directions

GETTING READY
1 Lightly grease a 8 1/2 x 4 1/2- x 3-inch loaf pan.

MAKING
2 In a pan, bring water and salt to a boil.
3 Add in the grits.
4 As per the package directions, cook the grits until done.
5 Remove from the heat.
6 Add in the bacon and 1 tablespoon butter, stirring until the butter melts.
7 Transfer into the prepared loaf pan.
8 Allow to cool.
9 Cover and refrigerate overnight.
10 Invert the pan and remove the grits.
11 Cut the loaf into 1/2 inch slices.
12 In a large skillet, melt the remaining 1/4 cup butter.
13 Fry the slices over medium heat for 5 to 7 minutes or until lightly browned, turning once.

SERVING
14 Serve hot.
