|Water||4 Cup (64 tbs)|
|Grits||1 1⁄2 Cup (24 tbs) (Instant / Quick)|
|Velveeta cheese/Sharp cheddar||1 Pound|
|Margarine||3⁄4 Cup (12 tbs) (1 1/2 Sticks)|
|Canned chopped pimentos||4 Ounce (1 Small Can)|
|Canned chopped green chilies||4 Ounce (1 Small Can)|
|Eggs||4 , beaten|
Preheat oven to 350°.
Bring water to boil, add grits and cook about 3 minutes, stirring continuously.
Beat eggs and add a little of the hot grits while beating; then add rest of grits and margarine.
Cut cheese into small pieces and add to grits mixture along with pimentos and chiles.
Pour into baking dish and bake for 1 hour.
