Hominy Grits

  Egg 1 (Yolk And White Beaten Separately)
  Salt To Taste
  Margarine 1 Teaspoon
  Hot cooked enriched hominy grits 3⁄4 Cup (12 tbs) (Hot)
  Hot tomato sauce 1⁄4 Cup (4 tbs) (0.5 Cup Tomato Juice Reduced By Half)

Stir beaten egg yolk into grits, season with salt and add margarine.
Fold in stiffly beaten egg white.
Transfer to small individual casserole.
Set in pan holding hot water which comes about halfway up the dish.
Bake at 375° F. about 1 hour.
