Simmered Celery A La Francaise
|Milk||1 Cup (16 tbs)|
|Potato water||125 Milliliter|
|Grated cheese||60 Milliliter|
Place the prepared celery in a bowl, cover with milk.
Let stand 40 minutes.
This step can be omitted, but some of the texture and flavor will not be as delicate.
After 40 minutes, drain the milk from the celery.
Use it to make white sauce or add to soup.
It will keep 3 to 4 days refrigerated, covered.
Pour the potato water over the celery, add the butter.
Cover and microwave 15 minutes at HIGH.
Salt and pepper to taste.
