Celery Root Dijonnaise

Ingredients
  Celery root 1
  Olive oil/Vegetable oil 50 Milliliter
  Dijon mustard 30 Milliliter
  Wine/Cider vinegar 15 Milliliter
  Salt 1 Milliliter
  Pepper To Taste
Directions

Peel and slice the celery root, as for Celery Root Nature.
Place in a microwave-safe dish with 2 tablespoons (30 mL) of water.
Cover and microwave at HIGH 5 to 7 minutes.
Since this is to be served cold as a salad, the celery root should be a little crisp.
Drain and leave uncovered while preparing the dressing.
Mix the remaining ingredients together.
Pour over the cooled celery root.
Toss gently.
Serve in a bowl or surround with thinly sliced cold roast beef or veal.
