Arugula with Sun Dried Tomatoes

Ingredients
  Sun-dried tomatoes 8 , packed without oil
  Hot water 1⁄2 Cup (8 tbs)
  Fat free french dressing 1⁄3 Cup (5.33 tbs)
  Balsamic vinegar 1 Tablespoon
  Unsweetened apple juice 1 Tablespoon
  Dijon mustard 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Torn arugula 4 Cup (64 tbs)
  Freshly grated parmesan cheese 1⁄4 Cup (4 tbs)
Directions

Combine tomatoes and hot water in a small bowl; let stand 10 minutes.
Drain and cut tomatoes into quarters.
Combine dressing and next 4 ingredients in a small bowl, stirring well.
Combine tomato and arugula in a bowl, tossing lightly.
Drizzle dressing mixture over arugula mixture.
Sprinkle with Parmesan cheese.
