Arugula with Sun Dried Tomatoes
|Sun-dried tomatoes||8 , packed without oil|
|Hot water||1⁄2 Cup (8 tbs)|
|Fat free french dressing||1⁄3 Cup (5.33 tbs)|
|Balsamic vinegar||1 Tablespoon|
|Unsweetened apple juice||1 Tablespoon|
|Dijon mustard||1 Teaspoon|
|Torn arugula||4 Cup (64 tbs)|
|Freshly grated parmesan cheese||1⁄4 Cup (4 tbs)|
Combine tomatoes and hot water in a small bowl; let stand 10 minutes.
Drain and cut tomatoes into quarters.
Combine dressing and next 4 ingredients in a small bowl, stirring well.
Combine tomato and arugula in a bowl, tossing lightly.
Drizzle dressing mixture over arugula mixture.
Sprinkle with Parmesan cheese.
