Celery Au Gratin

Ingredients
  Celery head 1
  Butter 1 Ounce
  Flour 1 Ounce
  Celery water 1⁄4 Pint
  Milk 1⁄4 Pint
  Grated parmesan cheese/Grated cheddar cheese 2 Ounce
  Salt To Taste
  Cayenne pepper To Taste
  Browned breadcrumbs 1 Cup (16 tbs)
Directions

Prepare the celery and cut into dice.
Cook in a little boiling salted water until tender, drain well.
Make a white sauce with the butter, flour, celery stock and milk.
Add half the cheese and season carefully.
Fill a greased fireproof dish with alternate layers of sauce and celery.
Sprinkle the rest of the cheese and a few breadcrumbs on top.
Reheat in the oven or under the grill.
