History and Origin of Fasolada
Though the dish is savored all through the year, it is especially prepared during the time of religious fast. The days prior to Easter are called Lent and it is the time for fasting for Orthodox Christians of Greece. The dish does not contain any meat as meat is forbidden in Lent period.

The fasolada recipe belongs to Greek cuisine and the dish is popular in Crete, which is the largest and most populous Greek island. This healthy soup is also referred to as “the national food of the Greeks”. This dish is also eaten in Egypt and is called fasoulia. In Turkish cuisine, it is known as fasulye.
Method Of Preparation And Ingredients Used In Fasolada Recipe
The ingredients used in Fasolada preparation are haricot beans, onions, garlic, carrots, celery, tomatoes, vegetable stock, oregano, parsley, salt and pepper. For making the dish, the beans are soaked overnight. The soaked beans are simmered for about half an hour to make them soft. Onions, carrot, garlic and celery is added and the mixture is cooked. Tomatoes, vegetable stock, oregano, salt and pepper are also added and the soup is prepared.
The soup is served hot with garnishing of chopped parsley.

- Usually for making fasolada white beans are used, though lima beans can also be used as one of its ingredient.
- The fasolada in Italian cuisine and Portuguese cuisine use meat for the soup preparation.
- Haricot is one of the ingredients used for the traditional recipe. But due to its availability in some places it can be substituted with navy beans.

Fasolada is mostly eaten with salads and breads. Feta cheese and olives are usually served with the dish. White wines such as Santorini pairs well with this healthy soup preparation.
