Tasty Greek-Style Skordalia

  Idaho potatoes 2 1⁄2 Pound, peeled, cooked and mashed, chilled
  Garlic cloves 10 , minced
  Sherry wine vinegar 3 Tablespoon
  Extra virgin olive oil 3⁄4 Cup (12 tbs)
  Kosher salt 2 Teaspoon
  Ground pepper 1 Teaspoon (White Or Black)

1. In mixing bowl equipped with paddle, mix mashed potatoes, garlic and vinegar.
2. Pour in oil, while beating, until smooth. Adjust seasonings with salt and pepper.
3. Serve with bell pepper strips, black olives, pita wedges and fennel pieces.
