Loin Of Pork With Greek Seasoning

Ingredients
  Pork loin roast 5 Pound
  Garlic 1 Clove (5 gm), chopped
  Salt 1 Tablespoon
  Greek seasoning/Dried chervil and oregano 1 Tablespoon
  Black pepper 1⁄4 Teaspoon
  Corn oil 1⁄2 Cup (8 tbs)
  Sherry 2 1⁄4 Cup (36 tbs)
Directions

Sprinkle the pork with the garlic, salt and spices.
Place in a bowl, cover and refrigerate for a few hours, or overnight.
Remove meat from bowl and brown in the heated oil on all sides.
Place the loin on a rack in a roasting pan, pour in the same oil in which it was browned, and roast at 375 degrees for about two hours, basting with the sherry from time to time to prevent drying out.
Transfer to a serving platter, slice and serve hot.
