Greek Nut Cake
|Walnuts||1 Cup (16 tbs)|
|Grape nuts cereal flakes||3⁄4 Cup (12 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Baking powder||1 Teaspoon (Calumet)|
|Grated orange rind||1 Teaspoon|
|Grated lemon rind||1⁄2 Teaspoon|
|Honey||1⁄2 Cup (8 tbs)|
|Lemon juice||1⁄2 Teaspoon|
Chop walnuts very fine.
Then beat egg yolks until light in color.
Add sugar, 2 tablespoons at a time, and continue beating until thoroughly blended.
Stir in vanilla, water, spices, baking powder, nuts, cereal, and orange and lemon rind.
Beat egg whites until peaks will form.
Fold into cereal mixture.
Pour into a greased 13x9x2-inch baking pan.
Bake in moderate oven (350Â°F.) about 30 minutes, or until done.
Cool but do not remove from pan.
Combine honey, water, and lemon juice in saucepan and heat thoroughly.
Cool to lukewarm.
Then pour over surface of cool cake and let cake stand until syrup is absorbed.
Cut in squares.
