  Chicken breasts 4 Large, butterflied
  Olive oil 1⁄4 Cup (4 tbs)
  Onion 1⁄2 , chopped
  Scallion 1 , chopped
  Frozen spinach 1⁄2 Pound
  Low fat crumbled feta cheese 1⁄2 Pound
  Egg 1
  Dried dill 1 Tablespoon
  Pepper 1⁄2 Tablespoon
  Oregano 1 Teaspoon (to taste)
  Lemon juice 1 Teaspoon (to taste)

1. Preheat the broiler.
2. Butterfly the chicken breasts.

3. Sauté onion and scallions in the olive oil on medium heat for 1 minute.
4. Add spinach and sauté for 10 minutes.
5. Put the spinach and onion mixture in a bowl to cool.
6. Mix spinach, ricotta, dill, and pepper until combined.
7. Stuff butterflied chicken breasts evenly.
8. Broil for 10 minutes, flip, and broil for 10 additional minutes.

9. Sprinkle oregano and squeeze fresh lemon juice on chicken spanaki and serve.
