Ambrosia Refrigerator Dessert

Ingredients
  Unflavored gelatin 1⁄2 Ounce (2 envelopes)
  Orange juice 1 1⁄2 Cup (24 tbs)
  Boiling water 1 Cup (16 tbs)
  Sugar 3⁄4 Cup (12 tbs)
  Salt 1⁄8 Teaspoon
  Heavy cream 1 1⁄2 Cup (24 tbs), whipped
  Coconut 1⁄2 Cup (8 tbs), flaked or shredded
  Orange rind 1 1⁄2 Teaspoon, grated
  Orange pieces 1 Cup (16 tbs), peeled,drained
  Lady fingers 12
Directions

MAKING
1 In a bowl, soften gelatin in 1/2 cup orange juice.
2 Add in boiling water and sugar.
3 Stir well to dissolve the gelatin.
4 Add in the remaining orange juice and salt.
5 Place in the refrigerator and chill until thickened.
6 In a bowl, whip gelatin mixture until fluffy.
7 Blend well with the cream.
8 Gradually fold in flaked coconut, orange rind and pieces.
9 On the bottom of a 7" spring form pan arrange the lengthwise lady finger halves.
10 Cover with about 1/3 of orange-cream mixture.
11 Let 14 to 16 lady finger halvesd stan up along the sides of pan, rounded side out, and touching bottom of the pan.
12 Addin the remaining orange filling.
13 Place in the refrigerator and chill for several hours, or overnight.

SERVING
14 Serve with whipped cream or garnished with coconut and orange pieces.

TIP
If the lady fingers stand above filling, bend down for scalloped rim.
