Babe Farms Greek Salad
|Continental salad blend||1 Pound (1 Bag, Babe Farms)|
|Teardrop tomatoes||6 Ounce (1 Basket, Red / Yellow, Babe Farms)|
|Green bell peppers||1⁄2 , cored, seeded and diced|
|Red bell peppers||1⁄2 , cored, seeded and diced|
|Red onion||1⁄2 Small, diced|
|Cucumber||1 , peeled and diced|
|Olive oil||3⁄4 Cup (12 tbs)|
|Fresh lemon juice||2 Tablespoon|
|Red wine vinegar||2 Tablespoon|
|Garlic||1 Teaspoon, minced|
|Fennel seeds||1 Teaspoon|
|Fresh oregano||3 Tablespoon, roughly chopped|
|Kalamata olives||1⁄2 Cup (8 tbs)|
|Feta cheese||1⁄2 Cup (8 tbs), crumbled|
1. In a medium bowl mix oil, lemon juice, vinegar, garlic, fennel, oregano, and salt and pepper and whisk well until mixed properly.
2. In a large salad bowl put the salad blend, tomatoes, bell peppers, onion and cucumber, drizzle the dressing and toss nicely so the dressing is evenly coated.
3. Sprinkle with olives and feta.
4. Serve with a bread for a light lunch or a side dish with meats.
