Greek Cheese Pies

Ingredients
  Refrigerated 9 inch pie crust 30 Ounce (2 Packages Of 15 Ounce Each)
  Feta cheese 3⁄4 Pound, cut into small pieces
  Light cream 1 Cup (16 tbs)
  Eggs 3
  Dried thyme leaves 1⁄2 Teaspoon
  Cornstarch 1 Teaspoon
  Pepper 1 Dash
  Garlic 1 Clove (5 gm), crushed (Small Ones)
  Pitted ripe olives 9 Large, sliced
  Pitted green olives 7 Large, sliced
  Pimiento 1 , cut into strips
Directions

GETTING READY
1.Preheat the oven to 375 degrees.
2.Prepare flat crusts by unfolding the pie crusts and by following the package directions.
3.Mark 48 circles by using 2 1/2 inch cookie cutter and cut them out.

MAKING
4.Take a muffin tin, put the circles in it and press.
5.Prick the circles using a fork and freeze for 10 minutes.
6.Bake the shells for 10 minutes.
7.Meanwhile, combine cheese, cream and eggs together.
8.Put thyme, pepper and cornstarch.
9.Add garlic and mix well.
10.Put the mixture in pie shells and bake for 10 minutes.Top each shell with olive and bake for 15 more minutes.

SERVING
11.Serve decorated with pimiento strips
