Horiatiki Salata - The Greek Village Salad
|Tomatoes||4 , seeded and diced|
|Cucumber||1 , peeled, seeded and cubed|
|Red onion||1 , halved and thinly sliced|
|Kalamata olives||1⁄2 Cup (8 tbs)|
|Feta cheese||1⁄2 Cup (8 tbs), cubed or crumbled|
|Olive oil||1⁄2 Cup (8 tbs)|
|Red wine vinegar||1⁄4 Cup (4 tbs)|
|Garlic||2 Clove (10 gm), minced|
1. In a salad mixing bowl, add diced tomatoes, cubed cucumbers, sliced red onions, Olives, feta cheese and toss together.
2. In a small bowl, whisk together the olive oil, vinegar, garlic, oregano, salt and pepper.
3. Pour the dressing into the salad mixing bowl with the vegetables and toss together and set aside in the refrigerator for 30 minutes
4. Serve cold in a nice salad dish.
