Braised Chicken Greek Style

Ingredients
  Vegetable oil 2 Teaspoon
  Skinless chicken parts 1 1⁄2 Pound
  Chicken 1 1⁄2 Pound, skinned
  Salt 1⁄4 Teaspoon
  Pepper 1 Dash
  Onions 3⁄4 Cup (12 tbs), diced
  Diced onions 3⁄4 Cup (12 tbs)
  Fresh minced garlic 1 Teaspoon
  Garlic 1 Teaspoon, minced
  Tomatoes 2 Medium, blanched
  Tomatoes 2 Medium, blanched, peeled, seeded and chopped
  Chicken broth 1⁄4 Cup (4 tbs)
  Tomato paste 1 Tablespoon
  Cinnamon stick 2
  Cinnamon stick piece 2
Directions

MAKING
1. In a large pan, heat the oil till it’s hot. The pan should be large enough to hold all the chicken pieces
2. Add the chicken and brown on all sides
3. Remove the chicken to a pan and sprinkle with salt and pepper
4. In the same pan, add the onions and the garlic
5. Stir the mixture and the onions till they are well browned
6. Return the chicken to the pan
7. Reduce heat, cover and cook for 35 minutes or till done. Baste the chicken with the pan sauces to prevent the chicken from drying out
8. Remove cover and cook again for five minutes

FINALIZING
9. Remove cinnamon stick before serving.

SERVING
10. Serve hot immediately
